Description
The secret to achieving the coffee-scented crème brûlée cream is steeping whole roasted coffee beans overnight in fresh milk.
Slowly soaking the whole beans instead of using brewed or powdered coffee ensures the coffee flavour is not overwhelming but instead remains delicate. The coffee cream is layered with an almond sponge cake in a crunchy shortbread base.
Finally, the caffeine-fuelled tart is coated with a lovely burnt sugar glaze.
